Summer Savory

Summer Savory has more delicate leaves, tender and not as intensely flavored as Winter Savory. Attractive herb for any garden, especially when grown in a small mass; bushy and growing to 12 inches high with warm lavender-pink flowers. Leaves are used in Herbs de Provence along with vegetables, stews, and gravies.

Satureja hortensis

Perennial, zone 5-8

Germination: 7-21 days

Germination Temperature: Optimum soil temperatures 65-70ºF.

Seed Planting Depth: Sow on surface and press into soil

Starting Indoors: Start indoors 6-8 weeks before the last frost. Provide 65-70ºF soil temperature. Transplant after last frost, space 8-12" apart. 

Sowing Outdoors: After the last frost, sow 12-18 seeds per foot, thin to 6-8” apart

Growth Habit: Mounding

Height and Width: 10-12” x 10-12”

Spacing: 8-12" apart

Light Needs:  Full sun

Soil Needs:  Summer Savory needs average to fertile, well-drained soil

Approximate days to flower from seed: 55-65 days

Uses: Culinary, medicinal, ornamental, attracts bees and beneficals

Harvest: Start snipping leaves when the plant reaches 6”. Harvest the entire plant before it flowers. Dry by bundling stems and hanging in a warm, dark well-ventilated area or using a dehydrator
