(Crocus sativus) The saffron crocus produces the most expensive spice in the world. The labor involved in harvesting the bright red thread-like stigmas on the fall-flowering bulb is what contributes to the sky-high prices. Aside from the flavor of the stigmas, these lilac-colored flowers are a beautiful sight and can be found blooming early to mid-autumn. The contrast between the purple hue and the orange and reds of the fall foliage is stunning. The saffron crocus is a great addition to the garden for both the spice and some late-season color. When growing Saffron Crocus in the Northeast it will bloom the following season. Zones 6-8
